What is Kimchi?
Kimchi is a staple on every Korean table. There are about 200 different types of kimchi, but what kimchi is known worldwide today is the classic napa cabbage kimchi. When freshly made, it is widely eaten as a side dish, like a salad. When fermented, it is eaten as part of a cooked dish, like in soups. Kimchi is a versatile and sustainable food and is widely popular worldwide for its unique, delicious flavors.

An Ancient Preservation Method
Fermentation is the process of preserving food through the development of natural acids and bacteria. An ancient preservation method found in many cultures, it is used to create staples like wine, cheese, century eggs, and sausage. Not only is fermentation an excellent preservation method, but it is also a highly sustainable way of saving food and transforming ingredients into diverse new dishes.

Why Sourdough?
Coming from Iran, I was deeply surprised, let's say it was a culture shock, by the long list of ingredients in supermarket bread. The true beauty of bread lies in its simplicity. Historically, it has always been a staple of cucina povera - an affordable, deeply satisfying, yet simple food. It has sustained humanity in this exact, pure form since the very dawn of civilization. To overcomplicate such a foundational staple just for the sake of mass preservation not only strips away its nutritions, but it ultimately makes the true purpose of bread redundant.

There are countless sourdough recipes out there, but understanding why each step matters is what gives you confidence to bake on your own. Through years of baking, experimenting and learning by observing the dough, I've discovered that sourdough doesn't have to be intimidating.
